Inka Wasi is a fast-casual, Peruvian restaurant brought to you by the El Pollo Inka family. Since our start in 2010, we have used only the freshest ingredients and spices imported from Peru. Fresh Ceviche and addictive Salchipapas rival mouth-watering Peruvian Rotisserie Chicken (Pollo a la Brasa) served with our famous AJI VERDE hot sauce (the green sauce).

Peruvian food is part Inkan, part everything else. Peruvian cuisine is a celebration of cultures. The Inka gave us the potato, quinoa, chili peppers and corn. The Spanish brought cattle (Lomo Saltado), citrus fruit, wheat, and rice. Africans introduced vinegar-marinated beef heart on skewers (Anticucho). Chinese immigrants brought soy sauce and sautéing (Saltados). As a result, Peruvian food is truly unique. We take pride in the many cultures that live through our cooking.

What many do not know is that our family originated the very first AJI VERDE in 1987. Yes, the famous ‘Peruvian green sauce’, or Aji Verde, does not exist in Peru. Papá Salomon created it. He was in need of a versatile sauce for El Pollo Inka, one with ingredients he could find at the local Los Angeles supermarket.

The Aji Verde is our family’s contribution to Peru’s expansive culinary culture. Still, many of our long-time customers have returned disappointed from trips to Peru. In shock, they mutter, “we could not find the green sauce.”

Many versions of our original spicy green sauce are now found in Peruvian restaurants across the United States, especially in the Los Angeles area. Peruvian food lovers are no strangers to our spicy green sauce. We have even found it in Spain! One day, we hope to see our Aji Verde green sauce find its way back to Peru. We hope to find it in restaurants, kitchens, and in homes, all over Peru. Our impact on Peruvian Cuisine will have come full circle. And we can’t think of a better way than that to honor its creator, Papa Salomon.
